Sweetcorn Fritters

  • 1 Tin Wattie’s cream style corn 
  • 1/2 cup frozen corn kernels
  • two tablespoons oil
  • 2 eggs
  • 1 onion chopped
  • 1/2 cup flour
  • 2 teaspoons ground coriander
  • 1 teaspoon whole cumin seeds
  • 1/2 teaspoon Chilli powder
  • 1/2 teaspoon Cayenne (yes, both).
  • salt
  • pepper
  • a good pinch of baking soda
  • 1/4 cup milk +/-


  • chopped coriander leaves or parsley
  • Minced garlic
  • finely diced red capsicum

Mix all ingredients, adding only enough milk that the batter will spread a little when dropped onto the pan.
fry on a hot pan or griddle lightly greased with butter/ghee/vanaspati/oil

Good with spicy plum sauce.
